When you sign up to take a cooking class, you should be prepared for hands on culinary experience. While some cooking classes are mere demonstrations, many cooking classes will expect the students to prepare the dishes themselves. You will follow the instructor's lead and the recipe instructions. Cooking barbeque

In the backyard barbeque cooker's Bible, it's almost blasphemous to give an electric smoker even an honorable mention in the "Best Smoker Category". To many of us, a smoker or grill that's attached to an electric cord is an insult to all of us who've smelled of wood smoke for a week because we stuck our head too close to the fire while adding charcoal!

Recently though, I've become an advocate of the electric smoker even if it does seem to be a sissy way of cooking a turkey, pork shoulder or beef brisket. Electricity was invented for making light bulbs work, running appliances, turning on the TV and drying your hair, not for cooking meat outside on the patio.

Cooking barbeque was always a chore given to the most virile of men, those who could lift a 20 pound bag of charcoal without injuring himself, then dump it in the container in the bottom of the smoker. Only the toughest of men could withstand the fumes from smoldering charcoal lighter without getting dizzy and sick to their stomach. Only a real man could live up to these criteria!

I didn't start using the electric grill voluntarily, but out of necessity. My daughter -in- law had a barely used electric smoker sitting in their garage that was getting in the way of more important things, like last year's Christmas decorations. When she offered it to me I initially refused, but then gave in when she said she would put it in the trash if I didn't take it off her hands.

The second Saturday in May of last year was supposed to be a beautiful day; for that was the day I had planned for our first neighbor barbeque of the spring! I awoke to find rain pouring off the roof in bucketfuls. My attentions had been to fire up the charcoal smoker and cook a few Boston Butts for about 10 hours, but this didn't seem possible now with all the rain. I was about to cancel the barbeque when I remembered the electric grill that I had stashed in a forgotten corner of the garage.

All men, at defining moments in their lives, have tough decisions to make. Mine was upon me. If I tried to use my old faithful charcoal smokers, the coals would soon be drowned due to the heavy downpour that was threatening to wash away my boat that was on its trailer. I couldn't put the smoker on the porch because the chance of fire with burning charcoal is a possibility anywhere you're cooking!

The electric smoker would have to do. What was the worst that could happen? I could cook the meat and if it didn't taste the way it should, I could finish it off in the kitchen oven. The barbeque would probably be something that tasted like wet cardboard, but I could blame that on my wife, saving my barbeque reputation.

With a sense of trepidation, I dusted off the electric smoker and carried it to the covered back porch. I stuffed a coffee can with hickory chips and water and set it in between the heating elements wands. Rain was pouring off the roof in torrents as I plugged grill's electric cord into the outside socket. In only a few minutes the element in the bottom of the smoker was red, illuminating the bed of lava rocks it was resting on. It would have taken much longer to get this kind of heat from a charcoal smoker.

By the time I had salted and peppered two large Boston Butt roasts and placed them on the broiler plate, smoke from the wood chips was beginning to flow from the bottom to the top of the smoker. Setting the lid of the smoker in place, I marveled at how much this grill was acting like a real charcoal smoker. If I was blind and at walked within smelling distance of the electric smoker, I wouldn't know the difference between that one and a real one.

The barbeque was delicious! I added more wood chips only once in the seven hours the meat was cooking. The rest of the time I watched a baseball game on TV and oiled and greased my fishing gear. I didn't have to add charcoal three or four times the way I normally do. When I lifted the top of the grill, the meat was juicy and fell completely off the bone. Fantastic!

Though I'm sold on the ease and time savings of electric smokers, it still doesn't seem like something John Wayne would do while camping out on the prairie!

The majority of the poor and malnourished in the world depend directly or indirectly on agriculture for their livelihoods making it essential for subsistence farmers in developing countries to become more productive. For these individuals, losing a crop to a drought or a crop-destroying insect can be the difference between life and death.

"800 million people, all together, do not know where their next meal is coming from," says Dr. Per Pinstrup-Andersen, Professor of Applied Economics at Cornell University, 2001 World Food Prize Laureate and catalyst behind the 2020 Vision Initiative. "If we don't apply science to solve poor people's problems, we're going to end up with scientific apartheid meaning science is for us, the non-poor. And, for the poor, science is too complicated, too sophisticated. That is not true. But to a considerable extent, that is what's happening today."

A vocal advocate for increased research to support food production and policy surrounding it, Dr. Pinstrup-Andersen supports farming technology and the advantages of genetic engineering of food crops that can contribute to poverty alleviation by increasing yields, improving nutrition and generating income among resource-poor, subsistence farmers in developing countries.

Since the technology is delivered in the seed and often requires less labor and fewer inputs, GM crops have a superior fit in subsistence farming operations. "You know, a 24-row combine harvester requires a big farm. But, the transgenic seed doesn't really have the same characteristics. The technological advantages of transgenic crops are contained in the seed," says Dr. C. Ford Runge, economist, professor and director of the Center for International Food and Agricultural Policy who has conducted research on the importance of agriculture in developing countries. "For example, in the U.S., you would expect, on average, to increase productivity by five percent. If you use Bt maize in the Philippines, that increase is 40 percent."

While GM crops are currently being grown in South Africa, subsistence farmers across the rest of the continent cannot yet grow GM crops yet more than 40 percent of Africans do not even have the ability to obtain sufficient food on a day-to-day basis. Declining soil fertility and land degradation have led to a 23 percent decrease in food production per capita in the last 25 years.

"It is incumbent on our government and on our scientists … to bring a technology, which can address a small-scale farmer," says Dr. Ruth Oniang, a member of the Parliament of Kenya, professor at Jomo Kenyatta University, and founder of Rural Outreach Program a not-for-profit organization that undertakes development activities aimed at improving livelihoods of the rural poor in Kenya, more than 55 percent of whom live below the poverty line. "I don't know of any country, which developed without using science and technology."

Research does indicate that highly productive agriculture has the potential to benefit whole economies �" increasing income and improving the economics of family farms, creating jobs and improving livelihoods for farm families. "What they typically require is a kind of an empowering tool, which allows them to reduce uncertainties, get greater incomes, and also to be able to invest more in their own households, as well as on the farm. What biotechnology enables them is precisely this," says Dr. Laveesh Bhandari, economist and director of Indicus Analytics in India, who recently studied the impact of this new technology in farming on households and communities in India.

"Take any place on the planet that was once extremely poor and is now either developed or on its way to becoming a developed economy, you'll find almost inevitably an agricultural revolution at the start of that a big rise in productivity, in the amount of food grown per hectare of land," says Dr. Jeffrey Sachs, director of The Earth Institute and United Nations Millennium Project, who for more than 20 years has been involved in identifying challenges to, and solutions for, poverty and hunger alleviation in developing countries. "Getting those technologies to the poorest farmers is absolutely one of the keys to making the breakthrough out of extreme poverty."

To remedy thousands of hereditary diseases being transmitted to newly born babies, British scientists are looking into the possibility of creating a human embryo with three parents as a means to correct genetic deformities within five years.

Newcastle researchers in northern England used in vitro fertilization (IVF) or test tube embryos from a male and two other females using a combined DNA and their findings were recently presented at a medical conference in Medical Research Council Centre for Neuromuscular Diseases conference in London.

As a way to prevent mothers from passing on to their offspring possible genetic defects and diseases, this experiment was conducted as mitochondrial DNA deformities responsible for diseases can be eliminated. According to statistics, one in every 5,000 or 0.02 percent of the population of babies being born in the world may suffer from mitochondrial diseases in the form of several diseases such as liver, kidney, heart or brain disorders. Others suffer from speech and hearing impairment or muscular defects or some form of epilepsy.

If this study will be successful, the scientists are looking forward that this will help in providing better techniques in preventing such diseases in new born babies in three to five years from now. Mitochondria are essential since they are good sources of energy. If they are found faulty, this means they will not be able to use food and oxygen well in the body. As this happens, toxins may build up and later lead to numerous deadly diseases.

Researchers said such instances can be prevented once the embryos with problems are given sufficient attention through mitochondrial transplant. This is done through IVF and the removal of egg's nucleus. The removed DNA can be replaced by healthy DNA from the donor egg.

In the normal setting, the fetus receives nuclear DNA or genes from his biological parents. But with the use mitochondrial DNA, it comes from a third party.

Dr. Patrick Chinnery said it is like taking away the diseased mitochondria and being replaced by healthy ones from a donor.

This study is still in its preliminary stages and will be subject for a series of tests. But other critics are opposing the idea for possible creation of designer babies that might have other problems in the long run.

The general color of the animal is reddish brown, this tint being imparted principally by the long hairs of the fur. There is an inner and softer down of a grey color, which lays next the skin, and which is the valuable growth of the fur. The total length of the animal is about three feet and a half, the flat, paddle-shaped, scale-covered tail being about a foot in length.

The young are brought forth in April or May, from three to seven at a litter, and take to the water when a month old. The first four years in the beaver's life is spent under the "maternal roof," after which period they care for themselves. Beaver trapping successfully, requires the utmost caution, as the senses of the animal are so keen, and he is so perceptive withal, that he will detect the recent presence of the trapper from the slightest evidences. The traps should be washed clean and soaked in lye, before using, and thereafter handled with gloves, as a mere touch of the finger will leave a scent which the acute sense of the beaver will easily perceive. All footprints should be carefully obliterated by throwing water upon them, and some beaver trappers say that the mere act of spitting on the ground in the neighborhood of the traps has been known to thwart success.

Almost the only bait used in trapping the beaver is the preparation called "bark stone" by the trappers, or "castoreum" in commerce. To the bark stone the beaver trapper is mostly indebted for his success, and the effect of its odor on the beaver is something surprising. Our best beaver trappers inform us that these animals will scent this odor for a great distance, and will fairly "squeal with delight," not being easy until the savory bait is discovered, which almost always results in capture.

Taking advantage of this curious tendency, the trapper always carries a supply of castoreum in a closed vessel.

There are various ways of trapping beaver, of which we will present the best. An examination of the river bank will easily disclose the feeding place of the beavers, as evinced by the absence of the bark on the branches and trunks of trees. At this spot, in about four inches of water, set your trap, which should be a Newhouse No. 4. Weight the end of the chain with a stone as large as your head, and, if possible, rest it on the edge of some rock projecting into deep water, having a smaller rope or chain leading from the stone to the shore. A small twig, the size of your little finger, should then be stripped of its bark, and after chewing or mashing one end, it should be dipped in the castoreum. Insert this stick in the mud, between the jaws of the trap, letting it project about six inches above the water. The beaver is soon attracted by the odor of the bait, and in reaching for it; his foot is caught in the trap. In his fright he will immediately jump for deep water, thus dislodging the stone, which will sink him to the bottom, and thus drown him. The smaller chain or rope will serve as a guide to the trap, and the victim may be drawn to the surface. Another plan in beaver trapping is to set the trap in about a foot of water, chaining it fast to a stout pole securely driven in the mud further out in the stream, and near deep water. Bait as before. The trap being thus fastened will prevent the efforts of the animal to drag it ashore, where he would be certain to amputate his leg and walk off. There is another method, which is said to work excellently. The chain is secured to a very heavy stone, and sunk in deep water, and the trap set and baited near shore, in about a foot of water. This accomplishes the same purpose as the pole first described, and is even surer, as the animal will sometimes use his teeth in severing the wood, and thereby make his escape. In the case of the stone a duplicate rope or chain will be required to lift it in case of capture.

The trap may be set at the entrance to the holes in the banks, two or three inches under water, implanting the stick with the castoreum bait directly over the pan, a few inches above the water. If the water should be deep near this spot, it is an excellent plan to weight the end of the chain with a large stone with a "leader" from it also, as already described. Insert two or three sticks in the bank beneath the water, and rest the stone upon them.

When the beaver is caught he will turn a somersault into deep water, at the same time dislodging the stone, which will sink him. No sooner is a break ascertained in the dam than all the beavers unite in fixing it and this peculiarity of habit may be turned to account in trapping beaver. Make a slight break in the dam, five inches across, beneath the water. On the under side of the break, and of course, on the inside of the dam, the trap should be set. The beavers will soon discover the leak and the capture of at least one is certain. The trap may be also set where the beavers crawl to shore, being placed several inches below the water in such a position that they will step on it when in the act of ascending the banks. Where the weighted stone is not used, the sliding pole should always be employed, as it is necessary to drown the animal, to prevent amputation and escape. The food of the beaver consists chiefly of the bark of various trees, together with aquatic plants. The fur is valuable only in the late fall, winter, and early spring.
